Saying goodbye to biscuits and gravy. My last time.



Errands today. Library to return the Einstein book, Aldi and Harter House for food. Ran out of time before I got to Walmart.

Repairmen this morning to fix the toilet stool, adjust the shower valve, replace some light bulbs I can't reach, and annual maintenance on furnace. $277.

I made headway on the cutting for the couture cards. 

Ate the rainbow. Had a grapefruit at lunchtime; salad and potato soup finished out all six categories.

I decided to bite the bullet and just buy a new washer and dryer instead of getting mine repaired. Said goodbye to my 17-1/2 year old Kenmores. They served me well.


Went to Lowes and bought new ones in less than thirty minutes. What's with the new idea of having glass tops so you can watch the clothes wash? Who does that? I narrowed my choice down to Maytag or GE. I think Maytag is more reliable, but I liked the GE features better. Deciding factor: Maytags are in Indiana, and the GE's will be here Friday. Easy choice. Git 'er done!

Back to Harter House for more Kentucky Legend hot dogs. Monday they were $1.50 per package of eight and Wednesday they are $2.50. Still a great price for all beef franks. And they're really good! I hope they'll stock them. The clerk said the price was low because they want customers to try new products and feel that they'll gamble on something new if it's not too pricey. I got two more packages for myself and four for Terri.

Woke up to this today.


Good! Kitties sleep during gloomy days.



Mim is off Monday, so I invited her and Fannie Mae to come for quiche to celebrate Auntie Kack's birthday a little early. I haven't made quiche since her birthday last year. And I haven't seen Mim in ages. Fannie Mae took me to lunch in December, so I haven't seen her in 2023.

Wow! The cat hair and kitty litter under the washer and dryer. How embarassing. I knew that other black footie would show up sooner or later. It did. Glad I saved its mate.

Mike and Cody had them out and loaded in no time. I was truly being blessed with this changeover. Great weather for getting out to go to Lowes, and I got a knowledgeable salesman who handled my sale, the set I chose was on sale, and my Lowes card 5% rewards knocked $65 off the price, the boys came immediately and took out the old and the new will arrive tomorrow.

Well, that didn't last very long.

And here they are; gee, that was easy.


Time to cook. Best laid plans, etc. I bought hamburger to make meat loaf and start my Weekly Meals plan, but that didn't happen. I buy hamburger in three-pound packages, and planned to use one, freeze one pound, and make frozen patties of the third. Since the meatloaf didn't happen, I cooked one pound with onion for spaghetti (froze it), made sloppy Joes with one pound (froze it), and cooked one pound with onion and seasoning to make Missouri goulash (froze it).

You win some, you lose some. A winner - Breakfast Oat Bars from a recipe I saw on YouTube (with my revisions). I like them a little sweeter. I cut these, wrapped each in film, and froze them. Adapted from Kevin's recipe. Click Here

BREAKFAST OATMEAL BARS

5 eggs
3/4 cup sweetened applesauce
1 cup any fruit yogurt
1 cup whole milk
2 tsps vanilla
1/2 cup honey
1/2 cup brown sugar
1 Tbs baking soda
1 tsp salt
6 cups oatmeal (not the Quick kind)1 cup fruit (raisins, craisins, dried apricots, fresh or frozen blueberries, chopped peeled apple, etc). 

Heat oven to 350° and grease a 13” x 9” baking dish. 

Whisk eggs in a large mixing bowl. 

Whisk in applesauce, yogurt, milk, vanilla, honey, brown sugar, baking soda, and salt. 

Gently stir in the oats until all are moistened. 

Stir in fruit and pour into baking dish. 

Bake 45-55 minutes until a skewer inserted in the middle comes out clean. 

Cool completely on a wire rack and then cut into squares. Wrap each in plastic wrap and freeze. 

Thaw and eat cold or warm in microwave or toaster oven.


My loser (sort of), White Chocolate Mousse. So easy, and maybe adaptable. Why couldn't it be made with chocolate chips or mint chips? Or mixed half and half with fruit yogurt, it isn't as sweet. Or maybe a filling for other desserts? Maybe meringues?
WHITE CHOCOLATE MOUSSE

12 oz. white chocolate baking chips
2 cups whipping cream, divided
1 Tbs powdered sugar
1 tsp vanilla
 Coconut, nuts, crushed candies, or berries for garnish. 

Melt the chips and 2/3 cup of the cream in a small saucepan over medium-low heat. 

Beat the remaining cream until it begins to thicken, then add the powdered sugar and vanilla.
 
Beat until soft peaks form. 

Fold 1/4 cup of the cream into the chocolate. Then fold in the balance. 

Spoon into dessert dishes, cover, and cool for at least two hours. 

Garnish and serve.

I didn't finish until midnight, so I was wiped out all day. I ran to Walmart for food for Monday, read, called Candy and Jim, napped, and ate Tonya Tacos.


All in all, not a bad week.
